This wine comes from a vineyard called “Les Combes de la Pauline” in Cairanne, with sandy and limestone soils, located at an altitude of 260m.
The grapes are hand-picked and sorted at the vineyard. They are fully destemmed. There is no use of sulfites. Vatting time is short with daily grape-treading and pumping-over for a gentle extraction of tannins and aromas.
Intense ruby red colour. Charming nose with notes of crushed raspberries and peppermint. The palate is smooth, tasty and fresh, with cherry and liquorice aromas. A mellow and acidulous wine, which can be enjoyed immediately.
Steak tartare – Vegetable curry, with chickpeas and coconut milk – Rack of lamb in a spicy crust – Buffalo Camembert – Chocolate and cherry fondant.
