Vineyard

Blend of different plots with marly soils, from Villedieu area located at an altitude between 320 and 340m. Vineyards called “Serre de la Donne” and “Jas des Vaches” surrounded by woods.

Winemaking

The grapes are hand picked and sorted at the vineyard. They are fully destemmed then fermented in concrete tanks, each grape separately. Vatting time is between 24 to 28 days with daily grape-treading and pumping-over. The wine is then aged six months in concrete tank before bottling.

Tasting notes

Red dark purple wine colour. Gourmet nose of jammy dark fruits and tonka bean. A round and structured palate, associated with violet and cocoa notes.

Food pairing

Duck rillette with figs – Caramelized turnip Tatin pie – Matured Galician prime rib – Fourme d’Ambert cheese – Chocolate and pepper mousse.
