We added an amphora to the blend, bringing balance and minerality to this oak-fermented wine. This vintage gave us a white wine combining aromatic complexity and freshness.
Vineyard
Blend of different small plots with marly soils, surrounded by woods. They are located at an altitude between 330 and 360m. The plots are named “Combe de l’Eoune” and “Petites Planes”, in Rasteau and the Côtes du Rhône.
Winemaking
The grapes are hand-picked and sorted at the vineyard, before sunrise to make the most of cool night-time temperatures. They are fully destemmed. There is gentle pressing and cold settling, then the must goes into old French oak barrels for fermentation at a low temperature (16-18°C).
Tasting notes
Yellow colour with a golden lustre. An elegant nose with white flowers, hawthorn, grilled almond, and honey aromas. On the palate, there is a pleasant balance between acidity and roundness. A perfect white wine for gourmet food.

Veal cutlet with cream sauce and morels – Prawns flambéed with Pastis – Truffle risotto – Cream of pumpkin soup – Old Comté cheese – Peach and rosemary Zabaglione.
