Vineyard

Blend of different little plots with clay-limestone soils, surrounding the winery in Rasteau. Vineyard called “Combe de l’Eoune”, elevated at 320m.

Winemaking

The grapes are hand-picked, before sunrise to make the most of cool night-time temperatures, then sorted at the winery. They are fully destemmed. Gentle pressing, cold-settling then the must goes into stainless tanks for fermentation at low temperature, until the expected sugar content is reached (density ~ 1040). Mutage with neutral wine alcohol. This is the same wine as the VDN blanc, but aged in an oxidative way, in oak barrels for five years.

Tasting notes

Deep gold wine color. A complex nose of spirits with walnuts, bitter almond and candied orange aromas. The palate is smooth, with juicy apricot, curry and blond tobacco notes. A rich and concentrated wine, reminding of a Rancio.

Food pairing

Eggplant seared with Cajun spices – Anchovies in salt – Pigeon pastille – Persillé des Aravis goat cheese – Roasted pineapple with dark chocolate – Almonds dartois – Spicy orange salad – As a digestive.
