Vintage 2023

This vintage gave us a fruity wine with hints of pear and white peach, smooth and well balanced.

Vineyard

Blend of different little plots with clay-limestone soils, surrounding the winery in Rasteau. Vineyard called “Combe de l’Eoune”, elevated at 320m.

Winemaking

The grapes are hand-picked, before sunrise to make the most of cool night-time temperatures, then sorted at the winery. They are fully destemmed. Gentle pressing, cold-settling then the must goes into stainless tanks for fermentation at low temperature, until the expected sugar content is reached (density ~ 1040). Mutage with neutral wine alcohol. Early bottling to keep the fruit and freshness.

Tasting notes

Pale gold wine colour. Vibrant and gready nose of pear and elderflower. Smooth, intense and crisp palate, with honey and verbena notes.

Food pairing

Pear and Roquefort Bite – Pan-fried foie gras, apple and rosemary – Carpaccio of scallops with Espelette pepper and poached pear with saffron – Faisselle with lemon verbena syrup – Apple and lime soufflé – Green tea light cream.
