Vineyard

Blend of different little plots with clay-limestone soils, surrounding the winery in Rasteau. Vineyard called “Combe de l’Eoune”, elevated at 320m.

Winemaking

The grapes are hand-picked, before sunrise to make the most of cool night-time temperatures, then sorted at the winery. They are fully destemmed. Gentle pressing, cold-settling then the must goes into stainless tanks for fermentation at low temperature, until the expected sugar content is reached (density ~ 1040). Mutage with neutral wine alcohol, then oxidative ageing in French oak barrels during thirty months.

Tasting notes

Pretty amber colour. Very aromatic nose with dried fruits, almond and baked apple aromas. The palate is enveloped by grilled almond and walnut notes. Beautiful length, which coats the palate with a sweetness and a tangy finish.

Melon, coppa and ricotta verrines – Roquefort, walnut and leek quiche – Red mullet in a saffron sauce – Pithiviers of quail and black garlic – Morbier cheese – Caramelised walnut tart.
