Vintage 2025 – Releasing in February 2026
We added an amphora to the blend, bringing balance and minerality to this oak-fermented wine. This vintage gave us a white wine combining aromatic complexity and freshness.
Vineyard
A blend of small plots of marl soils, bordered by woodland and located at an altitude of 400m, around the estate in Rasteau, in the lieu-dit « Combe de l’Eoune ».
Winemaking
The grapes are hand-picked and sorted before sunrise to take advantage of the cool night-time temperatures. They are fully destemmed. The process includes gentle pressing and cold settling, after which the must is transferred into one clay pot (1000L), French oak barrels, and demi-muids (228L and 600L) for fermentation at a low temperature.
Tasting notes
The nose is elegant, with floral notes, thyme and fresh almond. On the palate, there is a harmonious balance between acidity and roundness. A delicate and chiseled white wine, perfect for gastronomy, with great aromatic finesse.

Veal cutlet with cream sauce and morels – Prawns flambéed with Pastis – Truffle risotto – Cream of pumpkin soup – Old Comté cheese – Peach and rosemary Zabaglione.
