This vintage gave us a Cairanne of great depth, with fine textures and aromas.
Blend of different plot, mainly from the heights of the Ventabren mountain. Vineyards called “Les Combes de la Pauline” and “La Baye Bas” with limestone soils. The Grenaches from “Font Croze” grow on sandy soils and bring delicacy to the wine.
The grapes are hand-picked and sorted at the vineyard. They are fully destemmed then cofermented in concrete tank. Vatting time is between 28 to 35 days with daily grape-treading and pumping-over. Ageing is then in concrete tanks during twelve months.
Ruby red wine colour. Redcurrant and berries nose, with menthol notes. The mouth is round and structured, with black fruits and white pepper aromas. An elegant and fine wine.
Basquaise Piperade – Roasted partridge with Sault spelt – Lamb tajine with apricots – Truffled filet mignon – Camembert from Normandie – Warm chocolate and lavender tart.
