Rasteau

Vintage 2022 – currently ageing

This vintage gave us a deep, fruity and perfectly balanced sweet red. Tannins are well integrated and the acidity will help this wine to age in time.

Vineyard

Blend of different little plots with clay-limestone soils, surrounding the winery in Rasteau. Vineyard called “Combe de l’Eoune”, elevated at 320m.

Winemaking

The grapes are hand-picked, before sunrise to make the most of cool night-time temperatures, then sorted at the winery. They are fully destemmed then ferment in stainless steel tanks. Daily grape-treading and pumping-over, until the expected sugar content is reached (density ~ 1040). Mutage with neutral wine alcohol, then ageing in oak barrels during six months.

Tasting notes

Deep red wine colour. Intense nose, with juicy black cherries and cocoa notes. A true flavour explosion on the palate: it is smooth, rich and concentrated, with candied plums and white pepper aromas.

Food pairing

Pan-fried foie gras deglazed with Vin Doux Naturel Grenat – Roasted pigeon fillet with crème de cassis and liquorice juice – Bleu d’Auvergne cheese – Red berries and honey infusion – Chocolate fondant with cherry filling.
